KNOW YOUR SOURCE
We proudly partner with local farmers and producers to bring you fresh, responsibly sourced ingredients. By knowing where your food comes from, you’re supporting regional economies and reducing environmental impact. Learn more about our Know Your Source Program here.
COMPOST & RECYCLE
Our culinary team composts pre-consumer waste, such as scraps and trimmings from fruits and vegetables during food preparation. We also recycle boxes and aluminum cans from deliveries. We also make it easy to sort waste properly with clearly marked compost and recycling stations. Together, we can divert waste from landfills and return nutrients to the earth.
CHOOSE TO REUSE
Students receive a clean reusable container (Green Box) from the cashier when swiping in at Wertz. After use, they can return the dirty container to the cashier and choose between:
- Receiving a clean container immediately.
- Receiving an Exchange Card to redeem a clean container at a later time.
This process is designed to support sustainability by replacing disposable containers with reusable ones.
REDUCE FOOD WASTE
In the kitchen, food is batch-cooked as needed to ensure freshness and manage waste levels. In the dining hall, individuals are encouraged to take portions they expect to eat, with the option to get more if needed.
